Heat the oil and fry the onions until translucent but not browning. Dust over the curry powder, add the vinegar and season to taste with apricot jam, salt and ground black pepper. Mix well then remove from heat and leave to cool.
Mix the cornflour with 5 ml of water, add to the sauce.
Marinate lamb with the sauce for 4 hours - 1 night.
Soak the apricots in hot water to soften for around 15-20 minutes.
Thread the meat onto skewers along with the soaked dried apricots and chunks of onion, putting one or other between each chunk of meat.
Cook on a grill/bbq until the meat is cooked through then served.
Serve with drizzle with lemon juice, season with crushed black pepper.
Bahan:
2 sendok makan minyak untuk menggoreng
Bawang bombay, cincang halus
3 siung bawang putih
1 sendok makan bubuk kare
1 sendok makan gula merah
1ml cuka
4 sendok makan selai buah apricot
1 sendok teh tepung jagung / tepung maizena
Daging kambing (cubes)
Buah apricot kering
Lada hitam halus
Cara Memasak:
Panaskan minyak dan goreng bawang bombay, namun jangan sampai kecokelatan. Taburkan bubuk kari, tambahkan cuka dan bumbui dengan selai aprikot, garam, dan lada. Aduk rata kemudian angkat dan biarkan hingga dingin.
Campur tepung maizena dengan 5 ml air, masukkan ke dalam saus yang tadi sudah dibuat dan sudah dingin
Rendam daging dengan saus selama 4 jam - 1 malam.
Rendam aprikot dalam air panas hingga lunak sekitar 15-20 menit.
Masukkan daging ke tusuk sate bersama dengan aprikot kering yang sudah direndam dan potongan bawang, taruh satu atau lainnya di antara setiap potongan daging.
Masak di atas panggangan/bbq hingga daging matang lalu sajikan.
Sajikan dengan sedikit perasan jus lemon diatasnya dan taburan lada hitam
